Here are a few tips from Nutritionist Melissa Kathryn to use your leftover pumpkin this season.

You can roast the seeds, cube the extra pumpkin and roast it so you can add it to omelettes, warm or cold salads.

Add pumpkin to any smoothies or pancake mix to add thickness and additional nutrients to your dish and the flavor is very mild!

Pumpkin Nut Pie Smoothie

– 1 Cup Dairy Substitute or Dairy (your choice)

– 1 Scoop vanilla protein powder

– 1 Cup pureed pumpkin

– 1/2 frozen banana

– 1 Tbsp walnuts

– 1 Tsp cinnamon

– 1/4 Tsp nutmeg

– 1/4 Tsp cloves

In a blender, combine 1 cup of dairy with a scoop of vanilla protein powder, 1 cup of pureed pumpkin, 1/2 frozen banana, one tablespoon of walnuts, and one heaping teaspoon of a blend of cinnamon, nutmeg, and cloves. Combine until smooth. YUMMY!

Roasted Sweet Pumpkin Protein Treat

– Clean off the seeds

– Place them in a mixing bowl

– Add 1 tablespoon of melted coconut oil

– 1 tsp of granulated Monkfruit, Swerve or Stevia

– Add 2 tsp cinnamon

– ¼ tsp of real salt

– Mix in the bowl

– Place them on a baking sheet and bake on 375 degrees for 40-45 minutes or until browned
